Koffie werd in 1750 door de jezu\u00efeten in Guatemala ingevoerd; de teelt werd ontwikkeld door de Duitsers die er na 1860 naartoe emigreerden. Deze koffie wordt in het centrum geteeld, op het plateau en de vulkanische ruggen rond Antigua. De rijke vulkanische bodem, de lage vochtigheid, de intensiteit van de zon en de koele nachten hebben allemaal een gunstige invloed op de kwaliteit van deze koffie.<\/p>\n

De beste Guatemalteekse koffies komen uit het centrum; ze worden verwerkt volgens de natte methode, gedroogd in de zon of in verticale en horizontale ovens op perkament of hout, mechanisch, daarna elektronisch en handmatig gesorteerd, met schaduwteelt en zonder irrigatie.
