This exceptional coffee is harvested in western Panama, on the slopes of the Baru volcanic range, between 1,360 and 1,500 metres. Wet-method processing. The relatively cool temperatures and the fog contribute to a slow ripening of the cherries.
Farms in Panama are relatively small, from 1 to 10 hectares. The prices of these specialty coffees are quite high: there is a strong demand for land from North Americans, and many plantations have been sold and put to other uses. Wage standards are also higher than in neighbouring countries and seasonal workers are better paid there.
